You will need:
1 cup rolled oats
½ cup chocolate chips
½ cup ground flax seed
½ cup crunchy peanut butter
⅓ cup honey
1 tsp vanilla extract
First, put all ingredients in a medium sized bowl. Stir together until it is well mixed. Using your hands, form the mixture into balls. Place the bites on a baking sheet. Place the baking sheet in the refrigerator or freezer until they set! It usually takes about 1 hour for them to harden.
Sweet Potato Chips
You won’t need those processed chips on this hiking excursion! Instead, make your homemade sweet potato chips. To do this, purchase two medium-sized sweet potatoes. Slice them very thinly into round pieces. Use a mandoline slicer, if you have one! Next, spread olive oil onto a baking sheet. Place the slices of sweet potato on the baking sheet and brush olive oil on the stop of each slice. Next, sprinkle sea salt atop each slice. Preheat the oven to 350 degrees. Bake slices for 10 minutes. Flip each slice and bake for another 10 minutes. Remove them from the oven and let them cool. They will be crisp, salty, sweet potato chips, loaded with vitamin A!
