Easy Packable Lunch Ideas

With busy daily routines, work, and extracurriculars for the family, it is sometimes difficult to find time for healthy lunch choices. You do not have to stress over it anymore!

Salads and sandwiches are the most common lunch foods. They are convenient, portable, and easy to make ahead of time. Salads and sandwiches are also easy ways to get healthy vegetables and protein into your diet. We have a great list of different salad and sandwich options to get you inspired for delectable lunch creations. Take them to work, send them with your kids when they go to their extracurricular activities, or send them with your spouse!  In any case, easy and packable lunches that aren’t boring will be a great way to add nutritional value to your day!

Bistro Salad

Makes 4 servings:

3 tbsp walnuts, finely chopped and browned by skillet

4 eggs, hard boiled, peeled, cut in half

2 bacon slices, cooked and crumbled

8 cups mixed salad greens

¼ cup blue cheese, crumbled

1 pear, cored and sliced thinly

Dressing

1 tbsp white wine vinegar

1 tbsp extra virgin olive oil

½ tsp dried tarragon

Mix the dressing together and pour mixture over the salad greens and lightly toss.

Combine walnuts, bacon bits, cheese, and pear in a bowl.

In 4 separate containers, put the dressed greens, and add the walnut, bacon, cheese, and pear mixture, then top with the egg.

 

Romaine and Vinaigrette Salad

Makes 4 servings:

3 tbsp balsamic vinegar

2 tbsp olive oil

1 tbsp shallots, minced

1 tbsp fresh parsley, chopped

1 tsp Dijon mustard

A dash of salt

¼ tsp black pepper

1 garlic clove, crushed


6 cups of romaine lettuce

¼ cup dried cherries, or fruit of your choice, chopped

2 tbsp feta cheese, crumbled


Mix the first 8 ingredients in a bowl. Toss with the lettuce.

Portion salad in 4 containers.

Top with fruit and cheese!


Pesto Tuna Sandwich

Makes 4 servings:

2 6oz cans of tuna, drained

2 tbsp pesto

¼ tsp black pepper

Handful of spinach

8 slices whole wheat bread


Combine tuna, pesto, and black pepper in a bowl. Mix.

Add spread on bread.

Top with spinach.

Close sandwich with the other piece of bread.
