Great Egg Recipes for Meals On The Run

Healthy Mini Quiche

For a savory and satisfying meal or snack on the go, consider the simple mini quiche. Easily customizable and a cinch to store, mini quiches are low on carbs and high on protein. Additionally, if you pack them full of your favorite veggies you’ll get even more nutritional bang for your buck. Before you get started, make sure you have either a silicon muffin pan and olive oil cooking spray. You don’t want your quiches to stick in the pan!

Here are the ingredients to one of our favorite flavor combinations for a healthy mini quiche:

  • 8 eggs
  • 2 cups chopped spinach
  • 1 red pepper, chopped
  • ¼ cup cooked and chopped bacon
  • Sea salt
  • Fresh ground pepper

Preheat the oven to 375 degrees Fahrenheit and lightly spray the pan with the olive oil spray. In a skillet sprayed with the olive oil, sauté the red pepper for 5 minutes before adding in the spinach. Cook until the spinach is wilted and set aside. Crack and whisk the eggs together and then combine with the vegetables, bacon, and salt and pepper to taste. Divide the mixture evenly in the muffin pan and cook for about 30 minutes, or until set. Allow to cool for 10 minutes before removing from the pan. You can eat them warm right away or wrap up for a snack or meal on the go. Feel free to make your own version with different vegetables such as onions, zucchini, kale, or broccoli. Enjoy!

Egg Salad Wraps

Get ready for a busy week with these simple yet satisfying wraps. Egg salad can be made in many ways with your favorite flavors so you won’t get bored! To get started, here is one of our favorite versions of a healthy egg salad wrap:

  • 6 hard boiled eggs, peeled and chopped
  • 3 tablespoons Greek yogurt
  • 1 teaspoon fresh lemon juice
  • 2 tablespoons finely chopped chives or dill
  • 1 tablespoon capers, chopped
  • Dash of garlic powder
  • Salt and pepper to taste
  • Whole wheat tortillas or large romaine lettuce leaves
  • ½ cup chopped cucumber

In a medium-sized bowl, mix all of the ingredients together very well. Let sit overnight in the refrigerator to let the flavors meld. In the morning, take your wrap of choice (tortilla or lettuce), fill with half the egg salad mixture and ¼ cup of the chopped cucumbers. Take with you for a healthy meal on the go! Save the other half for yet another quick meal the next day. Feel free to add vegetables such as celery, chopped onions or shredded carrots for a nutritional boost. If you’re feeling spicy, add a few drops of hot sauce for a little kick!
