Fruit “Ice Cream.”
It’s surprisingly easy to make a frozen dessert using your favorite fruit and a few simple ingredients. Select fruit that freezes well, such as peaches, strawberries, or bananas. Freeze two cups of fruit. Then, put your fruit in a food processor along with around ¼ cup plain yogurt. You can also drizzle in a little bit of honey for added sweetness. Blend the ingredients for a few minutes until the mixture is smooth and creamy. You can enjoy it immediately, or store it in your freezer.
Ice Cream Sandwiches.
If you’re looking for a healthier alternative to the classic ice cream sandwich, give this easy recipe a try. It’s full of lighter, healthier ingredients and has even more flavor than a standard store-bought ice cream sandwich. To start, line an 8x8” baking dish with parchment paper. Prepare your sandwich filling by choosing what you want to use as your base. You can use two cups of Greek yogurt (plain or your favorite flavor), or you can freeze six very ripe bananas and blend them using a blender or food processor. Once you have your filling base ready, stir in just under one cup of diced fresh fruit. Pour this mixture into your prepared baking dish, and freeze for at least 3-4 hours. When you’re ready to make your sandwiches, simply cut the frozen filling into squares and carefully remove each piece from the pan. Sandwich each piece of filling between two graham crackers, and enjoy!
Fruity Frozen Yogurt Bark.
This delicious frozen yogurt bark is full of amazing flavor and texture, and it’s so simple to make! Simply line a baking tray with parchment paper or foil. Spread one cup of yogurt on the paper (you can make it as thick or thin as you’d like). Next, simply top the yogurt with whatever healthy toppings you want. Try using fresh or dried fruit, nuts, dried coconut, or cacao nibs (or a little bit of each). Then place the baking tray in your freezer until the bark is frozen solid. Remove your bark from the freezer, and break it into pieces. Enjoy the bark right away, or store it in your freezer to enjoy later.
